• Press strongly the hand lever (A), to flatten the dough (fig. 6.2).

• Then hold down the hand lever (A), and push the lever (B), to release the knives. Press

once again the hand lever (A), so the knives may lower down a little more (fig. 6.3). Now

the dough is divided into 22 or 30 portions with equal weight.
