Fresh Baked Apple Cake
Ingredients
♦ 1 cup White Sugar
♦ 1 Egg
♦ 1/3 cup Butter
♦ 1 ½ cups Flour
♦ 1 tsp. Baking Soda
♦ 1 pinch Salt
♦ 1 ½ tsp. Cinnamon, ground
♦ 1 ½ tsp. Vanilla Extract
♦ 2 cups Apples, peeled, cored, and
chopped
♦ ½ cup Walnuts
Directions
♦ Preheat oven to 350 degrees. Grease skillet with oil or butter.
♦ In a medium bowl, mix flour, baking soda, salt and cinnamon together and set aside.
♦ In a large bowl, cream the butter and sugar until fluffy. Add egg and beat well. Add
vanilla. Add the flour mixture and beat well. Fold in apples and walnuts.
♦ Pour batter into the greased skillet and bake for 45 minutes. Enjoy!
English Toffee
Ingredients
♦ 1 cup Butter
♦ 1 ¼ cup White Sugar
♦ 2 tbsp. Water
♦ ¼ cup Almonds, silvered
♦ 1 cup Chocolate Chips
Directions
Butter a 10x15 inch jelly roll pan.

Melt the butter in the skillet over
♦
medium heat. Stir in sugar and water. Bring to a boil and add almonds.
Cook while stirring constantly until almonds are toasted and the sugar is golden
♦
brown.
Pour the mixture into the prepared jelly roll pan. Note: Do not spread. Let stand for a
♦
minute and then spread chocolate chips over the top.
Let cool and then break into pieces. Enjoy!

Skillet Spinach Lasagna
Ingredients
♦ 1 lb. Italian Sausage
♦ 8 Lasagna Noodles, broken into pieces
♦ 1 can (28 oz) Crushed Tomatoes
♦ 1 can (8 oz) Tomato Sauce
♦ 2 cups Fresh Spinach, torn
♦ ½ cup Ricotta Cheese
♦ 4 oz. Mozzarella Cheese, sliced
♦ ¼ cup Parmesan Cheese, grated
Directions
♦ Brown Italian sausage in the heated skillet about 5-7 minutes. Break into small
pieces. Mix the noodles into the sausage.
♦ Pour crushed tomatoes and tomato sauce over noodle-sausage mixture and bring to
a boil. Cover skillet and reduce heat.
♦ Cook for about 25 minutes or until noodles are cooked and sauce is thickened.
♦ Add spinach, ricotta cheese, and mozzarella cheese, cover skillet and remove from
heat. Let lasagna stand for about 5 minutes and top with parmesan cheese. Enjoy!
Fried Rice with Cilantro
Ingredients
♦ 4 tsp. Vegetable Oil
♦ 5 Garlic Cloves
♦ 2 Green Chilies, diced
♦ 2 cups Chicken Breast, cubed
♦ 2 cups Jasmine Rice, cooked and chilled
♦ 1 tbsp. White Sugar
♦ 1 tbsp. Fish Sauce
♦ 1 tbsp. Soy Sauce
♦ 2 tsp. Green Onion, chopped
♦ 2 tbsp. Fresh Basil Leaves, chopped
♦ 5 tbsp. Fresh Cilantro, chopped

Heat oil in the skillet, over medium-high heat. Fry the garlic until golden in color. Add

the green chili peppers and chicken breast cubes and stir-fry until cooked through.
Add rice, sugar, fish sauce, and soy sauce into chicken mixture. Cook over medium

heat and stirring gently. Blend mixture well.
Stir in the green onions, basil, and cilantro. Cook for 1 more minute and Enjoy!
