2.3. INDUCTION COOKING OPERATING PRINCIPLE:

Induction cooking is based on the physical principle of heating, utilising Foucault current, of electrically
conductive materials
Foucault current is generated when conductive material is exposed to an AC electromagnetic fi eld.
Induction heating exploits the phenomenon of parasitic currents (also known as Foucault currents).
Parasitic currents are produced in conductive materials by variable magnetic fl uxes, such as those produced
by alternating current. Losses depend on the value of the maximum magnetic induction, i.e. the unitary
magnetic fl ux, which is created in the metal element.
Considering equal magnetic force, in practical terms, for the same current in relation to a given geome-
trical confi guration of the conductors the unitary magnetic fl ux is greater the higher the level of magnetic
permeability of the material.
Magnetic materials having very high permeability are utilised for induction heating vessels (because the
induced currents transform energy into heat – Joules).
Low permeability magnetic materials are utilised in the fi eld of electromechanical constructions (transfor-
mers) because they generate very little heat.
The induction coil located under the glass ceramic top is supplied by a converter / generator that transforms
mains power into high frequency AC (from 50Hz to 26,000 Hz).
