CLEANING AND PREPARATION OF CAST IRON
Follow the instructions below to clean and prepare cooking utensils made of cast iron.
Cleaning
After cooking food you can clean the utensil by filling it with water and boiling it up. Never use washing-up
liquid in prepared cooking utensils, it will destroy the preparation. Never expose hot cooking utensils to
cold water, it can cause the iron to distort or crack. Pour out the hot water and wipe dry with kitchen
paper. Scrape off any residual scraps of food with a spoon or the like. Do not use steel wool, Scotchbrite
or the like, this will damage the preparation. Apply a thin layer of fat all over the inside of the utensil while
it is still warm.
If there is a metallic taste, or rust, wash the utensil with hot water and washing-up liquid. Scrub off the rust
and prepare the cooking utensil again.
Store cast iron cooking utensils in a cool and dry place. If storing the utensil with the lid on, place kitchen
paper between the lid and utensil to allow air to circulate.
Preparation
The preparation causes fat to penetrate the pores in the cast iron and form a black surface to which food
does not stick. Follow the instructions below to prepare cooking utensils made of cast iron.

Heat the oven to 175°C.

Wash the utensil with hot water, washing-up liquid and a dishbrush. Rinse and wipe.
3.
Coat the entire utensil, outside and inside, with hot vegetable oil, melted tallow or lard etc.
4.
Place the utensil in the middle of the oven for 30 minutes. Take out the utensil and wipe off any
residual fat. Put it back in the oven for another 30 minutes.
Cast iron cooking utensils warm up uniformly, retain the temperature and are more versatile than many
other utensils.

Removing rust
Remove rust by scrubbing with washing-up liquid and a Scotchbrite sponge. Prepare the utensil again.
First preparation
Apply fat all over the inside of the utensil and place in the oven at about 125°C for 8 hours. Repeat for
several days in a row for best results.
Advantages of cast iron
Grill plates made of cast iron have a higher density than other grill plates, which makes them very suitable
for browning and frying. The grooves in the bottom allow fat and juice to trickle off.
Why do we prepare grill plates made of cast iron?
Cast iron grill plates need to be prepared, just like all other cast iron cooking utensils. The fat preserves
the smooth surface, prevents food sticking and prevents rust. Use cooking oil, tallow or lard.
