With the two recipes provided you can add different ingredients into the mixture
to come up with new exciting cakes.
Classic Victoria sponge
(Serves close to two batches)
Ingredients
Unsalted butter
Unrefined caster sugar
Eggs
Self raising flour
Milk
Method
1.
Beat the caster sugar and butter together.
2.
Add the eggs individually making sure you mix after adding each egg.
3.
Add half of the milk and flour and mix again.
4.
Repeat the same process adding the rest of the milk and flour.
5.
Cook for 4-5 minutes.
There are many different variations to this recipe for example before completing
stage two of the recipe add in 2 tsp of vanilla extract, juice of half a lemon with
the rind or various ingredients to suite your taste.
